Q: Are your bacon and ham nitrate free?
A: No. At this time, our bacon and ham are processed with nitrates.  With limited options for meat processing in the Mohawk Valley, shipping our meats to facilities committed to processing without nitrates would be cost prohibitive at this time.  We hope to eventually be able to offer nitrate free ham and bacon to those who desire it.

Q: Do you use only "certified organic" feed for your animals?
A: No.  Again, the additonal cost of "certified organic" feed would make our eggs and meats too costly for many of our present satisfied customers.  We believe that the way we raise our animals, employing intensive grazing with plenty of fresh air and sunshine and using no growth hormones, is the most important factor in providing high quality, nutritious food.
