Hello Summer! Celebrate the longest day of year with a tasty summer salad

Taco Salad

  • 2#'s Ground Beef
  • 1 large onion or 2 med
  • 1 stick butter
  • 1 16oz bag frozen corn (can use fresh or canned)
  • 3 crisp hearts of romaine lettuce
  • 3 ripe tomatoes, diced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup Sour cream 
  • green olives (optional)
  • Taco seasoning blend
    • 1 Tbsp Chili powder
    • 1 1/2 tsp Cumin
    • 1 tsp Salt
    • 1 tsp ground pepper
    • 1/2 tsp Paprika (I love using smoked paprika)
    • 1/2 tsp corn starch
    • 1/4 tsp garlic/onion powder
    • 1/4 tsp oregano
    • 1/4 tsp brown sugar
    • mix all together in jar

Directions

1. In a skillet brown ground beef, drain excess fat if prefered, add taco seasoning and 1/2 cup water simmer for 2 more mins

2. Chop onion and Saute it in a skillet with the butter till golden brown, add corn and cook few minutes more.

3. Chop lettuce and put in a large glass bowl 

4. layer on the taco meat, then onion and corn, followed by diced tomatoes, shredded cheese, sour cream and olives (if using)

5. serve as is or with salad dressing or some salsa

Serves 8-10 halve if feeding less  Prep Time: 35 mins.

*Note. you can add any additional toppings that your family enjoys.
