Beef n Stout

  • 3# chuck roast, cubed and tossed in a bag with
    • 1/4 C flour, 1 tsp salt, 1/2 tsp pepper and 1/2 tsp garlic powder
  • 3 med onions, cut in wedges
  • 4 Tbsp butter
  • 2 C Stout 
  • 2 C Beef or chicken stock
  • 2 bay leaves
  • 1 tsp Thyme
  • 16oz button mushrooms, cut in half
  • 4 Tbsp butter

Directions

for stove top:

  • melt butter in a dutch oven (or x-large skillet with lid) saute onions until slightly browned add beef and sear.
  • add stout, stock, and spices, cover and simmer for 2 1/2- 3 hours.
  • 30 mins from done, sweat mushrooms in butter in a skillet and add to meat. 
  • serve over creamy mashed potatoes.
  • enjoy!

for instant pot:

  • using the sear function, melt butter and saute onions and meat till seared.
  • add stout, stock and spices and cook for 50 mins using the meat/stew setting
  • sweat mushrooms in a skillet with butter, add to meat.
  • serve over creamy mashed potatoes. 
  • enjoy!
